roasted garlic and...


shrimp! and spinach!
*drool*
i pan fried some shallot rings in a low-medium heat pan to begin. after, i added some butter spray, chopped garlic (you know i love that stuff in the jar!), and spinach. after i cooked that through, i put some shrimp into a stone dish, coated the bottom with spray butter and garlic, and added my shrimp. i got the oven ready to a rip-roaring 400*, topped my shrimp with spray butter, and a pinch of panko.
bam!
those shrimp enjoyed a lovely 5-7 minutes in the sauna, before i broiled they got off for a minute or two.
*drool*
my perfectly cooked shrimp made their way out of the oven and jumped on top of my delicious spinach mix.
this dinner was quick & easy.... just like your mom!

...wait, have i made that joke already?

girl, i'm glad you cooked on sunday...
you inspired me!

edna made these delicious little egg roll wrappers that wrapped up spinach, shallots, and goat cheese. yum! luckily, she likes me enough to bring me some. they were tasty!
so i came home tonight, and i played the copycat!
i used wonton wrappers. a 16oz package of frozen chopped spinach (thawed & drained). 4oz of fat free cream cheese. two shallot bulbs. garlic. i blended all of that, sans wonton wrappers, on the pulse on the food processor. i rolled about a tablespoon in the wonton wrapper and rolled it up... just like an eggroll! sprayed that mess with cooking spray, and popped em in the oven at 400* for about fifteen minutes on each side.

now, i'm stuck on thinking of the perfect sauce to go with these delicious little spinach rolls!

mushrooms! cucumbers! red onions! oh my!


i realize that i haven't been getting nearly enough raw vegetables in. so i made two salads this week to help me better work them into my diet.

i've been making this cucumber, red onion, red wine vinegar, dill salad since the first week. it's quite tasty. i'll eat it plain, on a small pita with avocado, or on top of lettuce. it's tangy, crunchy, and has an excellent kick of fresh flavor.

oh, i'll be the first one to admit it.
i have
never-ever been one to eat raw mushrooms. my sister has always eaten them, and i'd watch her, and i'd want to barf.
then! on a late february day, came my mushroom revelation!
on a trip to Whole Foods, the capital of all things fantastic, they had some type of cold, whole mushroom salad with red onions, balsamic, and parmesan . clearly, cheese was not an option for this dinosaur.
let me just tell you, that big, fat, marinated mushroom cap was all it took to turn me onto mushrooms.
so i eased myself into the fantastic field of fungus, by opting for sliced mushrooms. i diced up some shallots, and let it stew in the fridge all weekend. i'll add some balsamic just a few hours before eating.
so here i am. advocating for mushrooms.

just don't tell my sister.
she'll say something like, "i told you so."

dinner tonight served with salad. delicious.

roasted asparagus with some of that pampered chef garlic & basil on it
whole grain brown rice
pan fried shallots
sauce: reduced chicken broth & a little bit of bearnaise powder

guess i didn't do too much cooking on this one.
whoops.
